SMALL BATCH BAKES

Honest Ingredients. Patiently Crafted.

From our kitchen to your table—bread made the way it was meant to be.

Every bake in the Sourdough Series begins with Tacita, our house-cultured starter. We honor a slow, 24-hour cold fermentation to achieve a complex profile and a soul-satisfying crumb. Each piece in this collection is a 48-hour labor of love—patiently crafted, intentionally timed.

The Anatomy of the Bake

Patiently crafted. Defined by structure.

The Starter

The Soul

A vibrant, house-grown culture that replaces commercial yeast to drive natural leavening. This living foundation is what gives our sourdough its characteristic tang, signature depth, and easier digestibility.

The Process

The Patience

Time is our most essential ingredient. A slow, 24-hour cold fermentation allows the organic flours to fully hydrate and the flavors to mature, resulting in a complex profile that simply cannot be rushed.

The Texture

The Contrast

A study in opposites. We curate a spectrum of mouthfeel, from the pillowy, cloud-like pull of our enriched buns to the sturdy, hand-shapen tension of a crisp and blistered sourdough crust.

The Result

The Finish

The culmination of the craft. Each bake offers a soul-satisfying crumb, an artisanal structure, and a natural longevity that honors the ancient tradition of slow-made bread.

STORAGE

Sourdough thrives in the open air; keep loaves cut-side down on a board. For our Cinnamon and Butter Buns, an airtight container at room temperature will maintain that pillowy, enriched crumb.

REFRESH

Loaves love a 180°C oven for 5 minutes to crisp the crust. For Cinnamon Buns, a 10-second microwave pulse is the quickest path to softness. For our preferred "Slow-Revival" oven method and more tips, visit our FAQ.

THE SERVE

Serve your Signature Loaf with salted butter or local honey. For the ultimate Cinnamon Bun ritual, enjoy warm with an extra side of buttercream for an indulgent, slow morning.

THE TABLE

If you’re unsure about anything, feel free to reach out — we’re always happy to help.

Get in Touch
  • Our bakes are created with intentional, high-quality organic flours.

    • The Signature Loaf: Organic bread flour, water, sea salt, and Tacita (house-starter). Contains: Wheat.

    • The Buns: Organic flour, cultured butter, whole milk, cane sugar, eggs, and sea salt. Contains: Wheat, Dairy, Eggs.

    • Safety Note: Handcrafted in a boutique kitchen that handles nuts and seeds. While we follow strict sanitation rituals, we cannot guarantee a 100% nut-free environment.

  • Because quality is never rushed, we observe a minimum 48-hour window from order to oven. This allows Tacita the necessary time to develop the signature depth and structure of a Sand & Slate bake. Orders are baked fresh the morning of your scheduled pickup or delivery.

  • Our bakes are timed to be at their peak for your arrival. Because we do not use preservatives or stabilizers, your loaf or buns are at their absolute best the moment they leave the oven. Please arrive during your selected window to ensure you receive your batch in its prime state.

  • As each item is baked to order based on a specific 48-hour fermentation cycle, we cannot offer refunds for missed collections. If you are unable to make your window, please contact the studio at least 48 hours in advance to reschedule your bake date. Items not collected by the end of the scheduled day will be donated to avoid waste.

  • Once your order is confirmed, you will receive a follow-up email with the exact studio address and parking instructions. We operate as a private artisanal kitchen, so we ask that you respect your scheduled window to ensure a seamless hand-off.

  • Since our bakes contain no artificial preservatives, they are best enjoyed promptly.

    • Loaves: Best within 3 days. Store cut-side down on a wooden board or in a breathable linen bag.

    • Buns: Best within 2 days. Store in an airtight container at room temperature.

    • Freezing: Our loaves freeze beautifully for up to one month. Slice before freezing and toast directly from frozen to "rewake" the crumb.

  • While a 10-second microwave pulse is the quickest path to a soft bun, the "Slow-Revival" is our preferred ritual:

    1. Pre-heat oven to 150°C (300°F).

    2. Place buns on a parchment-lined tray and cover loosely with foil to protect the buttercream.

    3. Warm for 5–8 minutes until the base is soft and the frosting is glistening. Note: Do not leave unattended, as the high sugar content can caramelize quickly.

  • Due to the perishable, made-to-order nature of artisanal bakes, all sales are final. However, your experience is paramount. If there is a concern with your order, please contact the studio within 12 hours of receipt so we can assist you.
